Pear Honey is a silky, amber preserve where ripe pears simmer with pineapple juice until they develop a delicate honey-like flavor and glossy finish.     Put the chopped pears in a large pot and pour the pineapple juice over them to keep them from browning.

    Stir in the sugar and bring the mixture to a boil over medium-high heat, stirring often to prevent scorching.

    Once the pears reach a full boil, reduce the heat to medium and cook until the mixture reaches the color and texture of honey.

    The longer you cook it, the thicker it will become.

    Cooking time is usually 2 to 3 hours.

    Ladle the mixture into hot, sterile jars, filling to within 1/4 inch of the top.

    Wipe the rims with a clean, damp cloth and seal the jars with lids and rings.

    Process in a boiling-water canner for 10 minutes, or for the time recommended by your local extension for your area.
