Ginger-Lemon Pear Preserves balance juicy, mellow pears with warm spice from fresh and crystallized ginger and a hint of citrus brightness. Ginger-Lemon Pear Preserves

    Gather all the ingredients.

    Combine the chopped pears with the sugar, crystallized ginger, lemon juice, fresh ginger, and lemon zest in a large heavy pot; let it sit for 2 hours so the pears release their juice.

    Set the pot over medium-high heat and bring to a boil; cook, stirring frequently, until the preserves are thick and fall from a metal spoon in sheets, 45 minutes to 1 hour. The pear pieces will be translucent and the preserves will have darkened.

    Sterilize the jars and lids in boiling water for at least 5 minutes.

    Pack the pear preserves into the hot, sterilized jars, filling them to within 1/4 inch of the top. Run a knife or thin spatula around the inside of each filled jar to release any air bubbles. Wipe the jar rims with a moist paper towel to remove any residue. Place the lids on and screw on the rings.

    Set a rack in the bottom of a large stockpot and fill it halfway with water. Bring to a boil and lower the jars into the boiling water with a holder, leaving 2 inches between jars. Add more boiling water if needed to raise the level to at least 1 inch above the jar tops. Bring to a rolling boil, cover, and process for 10 minutes.

    Lift the jars from the stockpot and set them on a cloth-covered or wooden surface, spaced several inches apart, until cool. Once cool, press the center of each lid to confirm a tight seal (the lid should not move up or down). Store in a cool, dark place.
