Warm the milk in a small saucepan over medium-high heat until it bubbles. Take it off the heat and stir in the sugar, salt, and shortening. Let cool to lukewarm.

As the milk mixture cools, dissolve the yeast in warm water and let it sit until creamy, about 5 minutes.

In a large mixing bowl, combine the cooled milk mixture with the yeast mixture. Stir in 2 cups flour, then add the remaining flour, 1/2 cup at a time, until you have a moderately stiff dough.

Move the dough to a lightly floured surface; knead until smooth and elastic, 8 to 10 minutes. Put the dough in a lightly greased bowl and turn it to coat. Cover the bowl with a damp towel and let the dough rise in a warm place until doubled in size, about 1 hour 20 minutes.

Punch down the dough and turn it out onto a lightly floured surface. Shape it into 2 balls, cover, and let rest for 10 minutes. Form the dough into 2 loaves and set them in the prepared pans; let rise until doubled, about 1 hour.
