    Lay the chickpeas out on paper towels and let them air dry completely.

    Preheat the oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.

    Arrange the chickpeas on the prepared baking sheet.

    Bake in the preheated oven until golden, shaking the pan every 10 minutes; this takes about 40 minutes.

    Remove the chickpeas from the oven and toss with mixed spice and salt.

    Return the chickpeas to the oven, turn the oven off, and leave them there until completely cold, about 2 hours or up to overnight.
