    Preheat the oven to 425 degrees F (220 degrees C).

    Place the frozen French fries in a single layer on an ungreased cookie sheet.

    Bake in the preheated oven until lightly golden, 22 to 24 minutes.

    Meanwhile, heat 2 tablespoons oil in a frying pan over medium-high heat. Season the sliced beef with salt and pepper. Cook and stir the beef in the hot oil until just cooked and the juices release. Using a slotted spoon, transfer the beef to a plate.

    Cook and stir the onions in the beef drippings in the pan until translucent, 3 to 4 minutes. Stir in the tomato and aji amarillo; cook until the tomato softens. Pour in the vinegar and soy sauce.

    Add the French fries and beef to the pan. Cover and cook until the beef is cooked through, about 3 minutes. Season with salt and pepper; sprinkle with chopped parsley to serve.
