Pofaki Gerdooyi
Pofaki Gerdooyi are delicate Persian walnut cookies scented with cardamom and vanilla, finished with a sprinkle of slivered pistachios for nutty fragrance and gentle crunch. Light, tender, and subtly spiced, they shine with tea or coffee and are especially fitting for Nowruz and other festive gatherings.

Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.

In a bowl, beat the yolks, sugar, cardamom, and vanilla with an electric mixer on high until creamy and pale, about 5 minutes. Stir in the walnuts.

Spoon teaspoons of batter onto the prepared baking sheet, leaving about 1 inch between each. Sprinkle with pistachios.
