Rinse the rice several times in cold water. Drain thoroughly in a mesh strainer and transfer to a large pot. Stir in the vegetable oil and let sit for 10 minutes.

Add 6 cups of water, the bouillon cube, char siu, and green onion to the rice. Bring to a boil over high heat; reduce to medium-low, cover, and simmer for 1 1/2 hours. Stir often as it cooks to help break up the rice grains and prevent burning on the bottom.

Stir in the remaining 2 cups of water and the century egg. Cook for another 1 1/2 hours, stirring often, until the congee reaches your preferred thickness. It is done when the individual rice grains are no longer visible and have thickened the soup.
