Bacon-Wrapped Gouda Potato Bites

    Preheat the oven to 400 degrees F (200 degrees C).

    Heat 1 tablespoon olive oil in a skillet over medium heat. Cook and stir the garlic in the hot skillet until fragrant, about 1 minute.

    Place the potatoes in a microwave-safe bowl. Add the remaining 1 tablespoon olive oil and toss to coat. Microwave until the potatoes are tender enough to easily pierce with a fork, about 6 minutes. Let cool until easy to handle, about 5 minutes.

    Slice the potatoes in half and scoop the insides into a bowl; set the potato skins aside.

    Add the garlic, Gouda, onion powder, salt, and pepper to the potato flesh and mash together. Fill the potato skins with the potato mixture and press the potato halves back together. Wrap a bacon slice around each filled potato and place on a baking sheet.

    Bake in the preheated oven until the bacon is cooked and crisp, 15 to 20 minutes.
