Potato Hay features airy strands of spiralized russets that turn shatteringly crisp in the air fryer with just a touch of oil. Lightly seasoned with salt and pepper, the tangle of golden fries delivers a delicate crunch and potato-forward flavor. Potato Hay

    Using a spiralizer with the medium grating attachment, cut the potatoes into spirals, snipping the spirals with kitchen shears after 4 or 5 rotations.

    Soak the potato spirals in a bowl of water for 20 minutes.

    Drain and rinse the potato spirals well.

    Pat the potatoes dry with paper towels, removing as much moisture as possible.

    Place the potato spirals in a large resealable plastic bag. Add the oil, salt, and pepper, then toss to coat.

    Preheat the air fryer to 360 degrees F (180 degrees C).

    Put 1/2 of the potato spirals in the fry basket and insert it into the air fryer. Cook until golden, about 5 minutes.

    Increase the temperature to 390 degrees F (200 degrees C).

    Pull out the fry basket and toss the potato spirals with tongs. Return the basket to the air fryer and continue cooking, tossing occasionally, until golden brown, 10 to 12 minutes.

    Reduce the temperature to 360 degrees F (180 degrees C) and repeat with the remaining potato spirals.
