Put the flour in a large bowl. In a cup, whisk together the water, egg, yeast, and sugar. Make a well in the flour and pour in the yeast mixture. Stir until a smooth dough forms, adding a little flour or water if needed. Cover the bowl with a towel and let it rise until doubled in size, about 30 minutes.

Preheat the oven to 425 degrees F (220 degrees C). Arrange the French fries in a single layer on a baking sheet.
