    Put the flour in a large bowl. In a cup, whisk together the water, egg, yeast, and sugar. Make a well in the flour and pour in the yeast mixture. Stir until a smooth dough forms, adding a little flour or water if needed. Cover the bowl with a towel and let it rise until doubled in size, about 30 minutes.

    Preheat the oven to 425 degrees F (220 degrees C). Arrange the French fries in a single layer on a baking sheet.

    Bake the fries in the preheated oven until golden, about 20 minutes. Lower the oven temperature to 350 degrees F (175 degrees C).

    Heat a large skillet over medium heat and cook the bacon pieces until browned, about 5 minutes; transfer them to drain on a paper towel.

    Coat a round pizza pan with baking spray.

    Punch down the dough and press it out onto the pizza pan. For a stuffed crust, sprinkle about 1/4 cup shredded Mexican cheese blend around the edge, roll the dough inward over the cheese, and pinch the dough to seal.

    Spread a thin layer of pizza sauce over the dough. Distribute the fries over the dough; pour gravy over the fries as needed to cover. Top with the remaining Mexican cheese blend. Sprinkle the bacon pieces evenly over the pizza.

    Bake in the preheated oven until the cheese is bubbly and the crust is golden, about 20 minutes.
