    Warm olive oil in a saucepan over medium heat. Add the onion and cook until softened, 5 to 6 minutes. Season with salt.

    Stir in the rhubarb, cranberries, sugar, vinegar, ginger, and the cinnamon stick; cook, stirring occasionally, until the rhubarb softens and starts to break down, 6 to 8 minutes. Remove the cinnamon stick before serving.
