    Secure a candy thermometer to a large, heavy-bottomed saucepan. Over medium-high heat, bring the maple syrup to a boil, stirring occasionally, until it reaches 235 degrees F (110 degrees C).

    Take the pan off the heat and let it cool to 175 degrees F (80 degrees C) without stirring, about 10 minutes.

    Beat the mixture briskly with a wooden spoon until it becomes thick, creamy, and lighter in color, about 5 minutes. Stir in the chopped nuts.

    Pour the mixture into molds; let it cool at room temperature until set.

    Remove the candy from the molds. Store in an airtight container for up to 1 month.
