Puto is a lightly sweet Filipino steamed cake with a soft, fluffy crumb and a salty edge from melted Edam cheese on top. It’s delightful warm or at room temperature, and pairs well with fresh fruit, chocolate, or jam for merienda or a simple dessert. The gentle steam cooking keeps each bite tender and moist.

    Grease small cake molds or ramekins that will fit in a steamer basket.

    Mix flour, sugar, and baking powder together in a bowl.

    In a separate large bowl, beat the eggs with the evaporated milk and water.

    Fold the dry mixture into the eggs until evenly combined.

    Fill the prepared molds two-thirds full with batter and top with shredded cheese.

    Fill a wok or a saucepan that can hold a steamer basket with a few inches of water.

    Bring the water to a boil over medium-high heat.

    Place the molds in a steamer basket, set it over the boiling water, and cover.

    Steam until a toothpick inserted in the center of one of the putos comes out clean, about 30 minutes.

    Cool on a wire rack and serve warm or at room temperature.
