Speedy Potato Gnocchi

    Put the potato flakes in a medium bowl. Add the boiling water and stir until combined. Let it cool.

    Stir in the egg, salt, and pepper. Mix in enough flour to form a fairly stiff dough. Turn the dough out onto a well-floured board. Knead it lightly.

    Divide the dough in half. Roll each half into a long, thin rope about the thickness of a breadstick. Using a knife dipped in flour, cut into bite-size pieces.

    Drop a few gnocchi into boiling water. When the gnocchi float to the top of the pot, lift them out with a slotted spoon. Repeat until all are cooked.
