Quick Rhubarb Chia Jam

    Put the rhubarb, water, and maple syrup in a pot. Simmer over medium-low heat, stirring now and then, until the rhubarb softens and the water is absorbed, 10 to 12 minutes.

    Take off the heat and stir in the chia seeds and vanilla extract. Let it cool, then pour into 2 small jars or a plastic container. Keep in the fridge for up to 2 weeks.
