Speedy Sweet Pea and Spinach Soup

    Melt the butter in a medium saucepan over medium-low heat. Cook the onion for about 10 minutes, stirring often, until lightly browned and soft.

    Blend the onion, peas, spinach, lemon juice, thyme, and 2 cups chicken broth in a blender or food processor until very smooth. Pour the mixture back into the same saucepan. Stir in the remaining broth. Warm gently for about 5 minutes, stirring occasionally.

    Stir in the cream, if desired. Heat over low heat for about 1 minute. Do not boil. Garnish with garlic croutons, if desired.
