Roasted garlic is blended into a lush paste that coats flat iron steaks, infusing them with mellow, nutty depth and a buttery finish. The meat stays tender and juicy with a peppery crust, perfect for a weeknight dinner or a relaxed weekend lunch. Roasted Garlic Flat Iron Steak pairs well with roasted vegetables, mashed potatoes, or a crisp salad.

Roasted Garlic Flat Iron Steak
  1. 1

Preheat the oven to 350 degrees F (175 degrees C).

  2. 2

Arrange the garlic cloves on a baking sheet and drizzle 1 tablespoon olive oil over the garlic.

  3. 3

Bake the garlic in the preheated oven until golden brown, 15 to 20 minutes, stirring once to prevent burning. Remove from the oven and let cool.

  4. 4

Place the cooled garlic and 1/2 cup olive oil in a food processor and blend until the mixture forms a paste.

  5. 5

Season the steaks with salt and pepper, then rub the garlic paste on both sides of each steak.

  6. 6

Place a large skillet over medium heat. Cook the steaks until the internal temperature reaches 135 degrees to 140 degrees F (60 degrees C), about 5 minutes per side. Remove the entire pan from the heat and let stand until the steaks reach an internal temperature of 145 degrees F (63 degrees C), or your preferred doneness.
