Lemon-Herb Roast Whole Chicken

    Preheat the oven to 350 degrees F (175 degrees C).

    In a bowl, mix together the Italian seasoning, garlic powder, seasoning salt, mustard powder, and black pepper; set aside.

    Remove the giblets from the chicken cavity; rinse the chicken thoroughly. Place the chicken in a 9x13-inch baking dish. Sprinkle 1 1/2 teaspoons of the spice mixture inside the cavity; rub the remaining spice mixture over the outside of the chicken.

    Stir the lemon juice and olive oil together in a small bowl; drizzle over the chicken.

    Bake in the preheated oven until the juices run clear, about 1 1/2 hours, basting several times with the remaining lemon-oil mixture. An instant-read thermometer inserted into the thickest part of the thigh, close to but not touching the bone, should register at least 165 degrees F (74 degrees C).
