Roasted Melting Potatoes

    Preheat the oven to 500 degrees F (260 degrees C) and set the oven rack in the upper-middle position. Butter a high-rimmed metal baking sheet to grease it.

    In a bowl, mix the melted butter, thyme, salt, and pepper. Add the potatoes and toss to coat completely. Arrange the potato slices in a single layer on the prepared baking sheet.

    Roast in the preheated oven until lightly golden, about 15 minutes.

    Turn the potatoes over and roast for another 15 minutes.

    Turn the potatoes again, add the vegetable broth and garlic, and roast until tender, about 15 minutes.
