Salsa de Tomatillo

    Put the tomatillos in a nonreactive saucepan and add enough water to cover them. Bring the water to a boil. Reduce to a simmer and cook until the tomatillos soften and start to burst, about 10 minutes.

    Drain the tomatillos and transfer them to a food processor or blender with the onion, the garlic, the jalapeños, the cilantro, the salt, and the pepper. Blend until you reach your preferred consistency.
