Sausage Stuffing

    Heat a large skillet over medium-high heat.

    Cook sausage until browned and crumbly, 5 to 7 minutes.

    Use a slotted spoon to transfer the sausage to a large bowl.

    Pour the sausage drippings into a measuring cup; add enough butter to make 1 cup total.

    Pour the mixture into the skillet and set over medium heat.

    Sauté the celery and onions in the butter mixture until the onion is tender; do not brown.

    Stir in 1/3 of the bread cubes.

    Transfer the mixture to the bowl with the sausage.

    Add the remaining 2/3 bread cubes, poultry seasoning, and pepper; mix well.
