Skillet Cabbage with Herbs

    Heat olive oil in a large lidded skillet over medium heat. Add shallot and carrots, and cook, stirring often, until the shallots start to soften, about 3 minutes.

    Stir in garlic and cabbage and cook for about 2 minutes, stirring often. Add vegetable broth and bring it to a boil.

    Sprinkle in the minced fresh herbs. Season with salt and pepper. Cook, uncovered, for about 3 minutes.

    Lower the heat to low, cover, and cook until the cabbage is as tender as you prefer, 8 to 10 minutes.
