Stout-Braised Beef Short Ribs

    Gather all the ingredients.

    Season the ribs with salt and pepper. Dredge them in flour until coated, then shake off the excess.

    Heat the olive oil and butter in a Dutch oven or large skillet over medium-high heat. Cook the ribs until browned, about 5 minutes per side, then remove them and set aside.

    Add the onion and garlic to the pot and cook, stirring, until the onion is tender, about 5 minutes. Return the ribs to the pot and pour in the beer, scraping up the browned bits from the bottom. Pour in the beef stock.

    Cover and simmer over low heat until the ribs are very tender, about 2 hours.
