Garlic-Marinated Grilled Lamb Chops

    Combine onion, vinegar, oil, garlic, salt, and pepper in a large resealable plastic bag. Add lamb chops, coat them with the marinade, press out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.

    Preheat an outdoor grill to medium-high heat and lightly oil the grate.

    Remove the lamb chops from the marinade and shake off any excess. Wrap the exposed ends of the bones with aluminum foil to prevent burning.

    Grill the lamb chops on the preheated grill until they start to firm and are hot with a slightly pink center, about 3 minutes per side. An instant-read thermometer inserted in the center should read at least 130 degrees F (54 degrees C).
