Basic Turkey Brining Solution

    Collect all the ingredients.

    Bring the water to a boil in a large stockpot.

    Stir in the salt and brown sugar until they dissolve; bring it back to a boil.

    Add the bay leaves, peppercorns, rosemary, thyme, and cloves. Lower the heat to medium-low and simmer for 15 to 20 minutes.

    Take it off the heat and let it cool completely before using.

    Place the thawed turkey in a large non-reactive container. Pour in the cooled brine.

    Add enough cool water to submerge the turkey in liquid. Refrigerate for 8 to 12 hours.

    Remove the turkey from the brine and let it sit on the counter for about 2 hours.
