    Put the collard greens in a large pot; cover them with salted water and bring to a boil. Lower the heat to medium-low; simmer until just tender, about 10 minutes. Drain and move the greens to a slow cooker.

    Meanwhile, cook the bacon in a large, deep skillet over medium-high heat, turning now and then, until evenly browned, about 10 minutes. Crumble the bacon; save the drippings.

    Add the chicken stock, bacon, drippings, and jalapeño slices to the slow cooker; season with salt and black pepper. Cover the slow cooker. Cook on Low for 8 hours or overnight.
