Smashed Cauliflower

    In a large saucepan over high heat, bring the cauliflower and chicken broth to a boil.

    Reduce the heat to medium, cover, and simmer for 10 minutes.

    Uncover the saucepan and raise the heat to medium-high.

    Let the cauliflower simmer until tender and the cooking liquid is reduced by half, about 10 minutes.

    Take the cauliflower off the heat, and add the butter, Cheddar cheese, and Parmesan cheese.
