    Place the turkey carcass in a large soup pot and pour the vegetable broth and water over the turkey frame.

    Bring to a boil, reduce the heat to low, and simmer until the meat falls from the bones.

    Remove the carcass, pick the meat from the bones, discard the bones, chop the turkey meat, and return it to the broth.

    Stir the green beans, corn, carrot, rice, celery, onion, green bell pepper, and red bell pepper into the soup; bring to a simmer and cook until the celery is tender and the rice is cooked.
