Low-and-Slow Sous Vide Corned Beef

    Fill a large pot with water and insert a sous vide immersion cooker. Set it to 140 degrees F (60 degrees C), following the manufacturer's instructions.

    Rinse the corned beef under cool water to remove excess salt, then pat it dry. Sprinkle the seasoning on the fatty side and press it into the beef. Place the corned beef in a large vacuum bag and seal it with a vacuum sealer.

    Place the sealed bag in the water and set a timer for 48 hours.

    Move the corned beef to a cutting board and slice it across the grain.
