    Heat the oven to 425 degrees F (220 degrees C). Place a 9-inch cast iron skillet on the center rack to preheat.

    Carefully take the preheated skillet out of the oven and add the oil; gently swirl it to coat the bottom and sides. Put the skillet back in the oven for 10 minutes.

    Meanwhile, combine the cornmeal and salt in a medium bowl. Beat in the buttermilk and eggs to make a thin batter.

    Carefully pull out the center rack and pour the batter into the hot oil in the skillet.

    Bake in the preheated oven until a toothpick inserted in the center comes out clean, 20 to 25 minutes. If you like, switch the oven to broil for the last few minutes of baking to brown the top.

    Shake the skillet to loosen the corn pone. Serve warm in the skillet or invert onto a serving plate.
