    Bring the water and rice to a boil in a saucepan. Lower the heat to medium-low, cover, and simmer until the rice is tender and the liquid is absorbed, 20 to 25 minutes.

    Heat the oil in a saucepan over medium-high heat. Sauté the onion until tender, about 5 minutes. Stir in the cooked rice and the spinach; cook and stir until the spinach wilts, 3 to 5 minutes. Add the lemon juice, zest, feta cheese, and dill. Take off the heat. Season with salt and pepper.
