    Pour the water, olive oil, and eggs into the bread machine pan. Add the salt, sugar, spelt flours, xanthan gum, and yeast. Place the pan in the bread machine and set it to the dough cycle. Check the dough as it mixes to make sure it combines well. Use a rubber scraper to scrape down the sides of the pan if needed.

    When the dough is finished, remove it and divide it into 3 pieces. Shape each piece into an 18-inch rope. Braid the three ropes, pinch the ends together to seal, and tuck them under the loaf. Place the braided loaf on a greased baking sheet, cover with a soft cloth, and let rise until doubled in size, about 1 hour.

    Preheat the oven to 375 degrees F (190 degrees C). Brush the loaf with beaten egg and sprinkle with poppy seeds.

    Bake in the preheated oven until the challah is golden brown and the loaf sounds hollow when tapped on the bottom, 40 to 45 minutes.
