Smoky Jalapeño Corn Salsa

    Preheat an outdoor grill to medium heat and lightly oil the grate.

    Grill the corn and poblano peppers on the preheated grill until the corn is charred and the peppers are softened, 12 to 15 minutes. Remove them from the grill and let them cool until easy to handle, about 10 minutes.

    Cut the corn off the cobs and dice the poblanos; place them in a bowl. Add the jalapenos, onion, cilantro, lime juice, salt, and pepper, and mix together.
