Fiery Peruvian-Style Pork

Dinner 🍽️Lunch 🥪 Peruvian 🇵🇪 High-Protein 💪Carnivore 🥩

Fiery Peruvian-Style Pork balances tangy vinegar and sweet orange juice with warm cumin, earthy turmeric, and a hint of garlic for a bright, aromatic bite. The pork turns tender and juicy as it simmers, with a lightly thickened sauce that coats each piece. Serve it for a cozy weeknight dinner or a weekend gathering alongside rice, potatoes, or warm tortillas.

  1. 1

Put the pork in a large bowl. In a small bowl, combine the vinegar, cumin, turmeric, garlic powder, salt, and pepper. Pour this over the pork and stir to coat. Cover and refrigerate for 1 hour.

  2. 2

Heat the oil in a large skillet over medium-high heat. Move the pork to the hot skillet, keeping the marinade. Cook in the hot oil until the outside is nicely browned. Add the orange juice, 1/2 cup water, the onion, and the reserved marinade. Lower the heat to low, cover, and simmer until the pork is fork tender, about 30 minutes.

  3. 3

In a small cup, mix the flour with 2 tablespoons water. Stir this into the skillet and simmer uncovered until thickened, 2 to 4 minutes.
