Spinach Tomato Tortellini

    Fill a large pot with lightly salted water and bring it to a rolling boil. Add the tortellini and cook until tender, about 10 minutes.

    Meanwhile, place the tomatoes, spinach, basil, garlic, salt, and pepper in a large saucepan over medium heat. Cook, stirring, until the mixture starts to bubble.

    Whisk the milk, cream, and flour in a medium bowl. Add this to the saucepan along with the Parmesan and stir to combine. Cook until the sauce is heated through, 3 to 5 minutes. Reduce the heat to low and simmer until thick, about 2 minutes.

    Drain the tortellini without rinsing. Gently add it to the saucepan and stir to coat with the sauce.
