Spiralized Apple Salad

    In a small bowl, whisk together the olive oil, white balsamic vinegar, Dijon mustard, and honey to make the dressing.

    Use a spiralizer with the large shredding blade to cut the Granny Smith and Red Delicious apples into noodles.

    Put the apple noodles in a large bowl and toss with lime juice to prevent browning. Add the dressing and mix gently until the salad is combined.

    Set a small skillet over medium-low heat and add the pine nuts. Toast, shaking the pan often, until golden brown, about 5 minutes, then sprinkle the pine nuts over the salad.
