Hearty Ham and Split Pea Soup

    Put the split peas in a large stockpot, cover them with cold water, and let them soak for about 1 hour.

    Drain and rinse the peas, then add two quarts of cold water, the ham bone, the onions, and the seasonings to the pot.

    Bring the pot to a boil, then lower the heat and simmer for about 90 minutes.

    Take the meat off the ham bone and put the meat back into the pot.

    Add the vegetables and cook until the vegetables are tender.
