Loaded Steak Nachos

    Coat a frying pan with cooking spray and heat over medium heat. Cook and stir the steak until only a trace of pink remains, 5 to 7 minutes. Drain the fat from the pan; add the taco seasoning to the steak. Simmer until it reaches your desired consistency, 3 to 5 minutes.

    Warm the milk in a medium saucepan over medium heat until small bubbles form along the edges, then remove from the heat.

    In a separate medium saucepan, melt the butter over medium-high heat. When the bubbles subside, add the flour. Cook, whisking constantly, until the mixture turns paste-like and light golden brown, about 5 minutes. Gradually whisk in the warm milk and bring to a simmer over medium heat. Cook and stir until thick and smooth, 10 to 15 minutes. Lower the heat to low and stir in the shredded cheese.
