Stracciatella Soup

    Bring the broth to a simmer in a pot over high heat. Taste the broth and adjust the salt and pepper as needed.

    Whisk the eggs, grated Parmigiano Reggiano and Pecorino Romano cheeses, parsley, semolina flour, salt, pepper, cayenne, and nutmeg together in a bowl until well combined.

    While stirring the simmering broth, slowly pour the egg mixture into the pot. Bring the mixture back to a simmer. The liquid will look slightly cloudy at first and will clear as the broth heats.
