Bright Strawberry–Rhubarb Compote

    In a large saucepan, mix together the sugar, orange juice, cornstarch, and vanilla. Bring the mixture to a boil over medium heat.

    Add the strawberries and rhubarb; lower the heat and cook, stirring now and then, until tender, 5 to 10 minutes.

    Take off the heat and mash the cooked berries with a fork until combined.

    Stir in the food coloring, if using. Serve warm or cold.
