Beef and Rice–Filled Red Bell Peppers

    Bring water and brown rice to a boil in a saucepan. Lower the heat to medium-low, cover, and simmer until the rice is tender and the liquid is absorbed, about 40 minutes; move the cooked rice to a large mixing bowl.

    Preheat the oven to 350 degrees F (175 degrees C).

    Meanwhile, heat a large skillet over medium-high heat. Break the ground beef into small pieces and add it to the skillet. Add the onion, mushrooms, and garlic; cook and stir until the beef is fully browned, 7 to 10 minutes. Combine the beef mixture with the brown rice.

    Stir the tomato sauce, diced tomatoes, tomato paste, and Italian seasoning into the rice mixture; season with salt and pepper.

    Place the bell peppers in a baking dish; spoon a generous amount of the filling into each bell pepper.
