Sun-Steeped Mint Iced Tea

    Pour water into a large lidded glass container. Stir in honey until it dissolves. Zest the lemon, taking care to avoid any white pith. Juice the lemon, then add both the zest and juice to the glass container.

    Working with one bunch at a time, hold the mint in one hand and use your other hand to twist and squeeze the leaves, lightly bruising them to release their scent and oils. Submerge the squeezed bunches in the water mixture. Cover the container and set it in direct sunlight for 2 hours.

    Remove and discard the mint leaves. Shake the tea, then pour it over ice in tall glasses. Garnish with mint sprigs.
