Thai Pork Satay

    In a medium bowl, combine peanut butter, green onions, soy sauce, lemon juice, brown sugar, garlic, coriander, and cayenne pepper; add the pork and stir to coat.

    Cover and marinate in the refrigerator for at least 30 minutes.

    Preheat the grill to high heat.

    Thread the marinated pork, water chestnuts, green bell pepper, red bell pepper, and sweet onion alternately onto skewers.

    Pour the remaining marinade into a small saucepan, bring it to a boil, and cook for several minutes.

    Lightly oil the grate.

    Cook the skewers for 10 minutes, or to your preferred doneness.

    Turn the skewers while grilling to cook evenly, and brush them with the boiled marinade during the last few minutes.
