The Crustburger

   Heat a heavy skillet or griddle over medium heat. Spread butter on the top of the top bun and the bottom of the bottom bun, then set them in the skillet. Press down firmly with a spatula to fully flatten the buns. Cook until both sides are toasted, then set aside.

   Raise the heat under the skillet to medium-high. Place the meat in a mounded ball in the hot skillet and press firmly with a spatula to flatten it. Gently move the spatula in a circular motion to make a very thin patty with ragged edges. Season with salt and pepper.

   Place the onion on top and cook until the edges are browned. Add the cheese on top and cook until the cheese melts. Scrape the burger from the skillet and set it on the top bun. Flip the other bun so the inside faces out. Return the burger to the skillet and cook about 1 minute per side.

   Stir the mayonnaise, ketchup, hot sauce, and fish sauce together in a small bowl. Serve the sauce alongside the burger.
