Dutch Crunch Tiger Rolls
Dutch Crunch Tiger Rolls feature a tender, airy crumb wrapped in a crisp, crackled topping with a hint of sweetness. The contrast between the soft interior and the shattering crust makes them stand out for sandwiches, soup sides, or a special dinner basket. Serve warm to highlight the buttery aroma and the signature tiger-striped finish.

Make dough: Combine the milk and water in a microwave-safe bowl; microwave in 10-second intervals until warm to the touch or an instant-read thermometer reads 100 degrees F (38 degrees C). Stir in the sugar and yeast; let stand for 15 to 20 minutes.
- 2
Stir the flour and kosher salt together in a large bowl; make a well in the center. Pour the yeast mixture and melted butter into the well; stir with a fork until a shaggy dough forms, 1 to 2 minutes. Switch to your hand and knead in the bowl until a ball of dough forms. Turn the dough out onto a work surface and knead until very smooth, soft, and elastic, 7 to 8 minutes.
- 3
Place the dough in a lightly greased bowl; cover and let rise in a warm spot until doubled in size, about 1 hour.
- 4
Preheat the oven to 400 degrees F (200 degrees C). Set the oven rack in the center position. Line a baking sheet with a silicone mat.
- 5
Make topping: Stir the rice flour, sugar, salt, vegetable oil, sesame oil, yeast, and warm water together in a small bowl. Add more water as needed to make a thick but spreadable mixture. It should be thin enough to spread over the rolls without deflating them but thick enough not to run off onto the pan. Cover the bowl with plastic wrap and set aside until needed.
- 6
Turn the risen dough out onto a work surface and press out the air while rolling it into a short, fat tube. Divide evenly into 6 pieces.
- 7
Shape each piece into a ball by pulling and pinching the dough at the bottom to create a smooth skin over the top. Transfer to the prepared baking sheet. Cover with a clean, dry tea towel and let rise until doubled in size, about 30 minutes.
- 8
Uncover the rolls and, using a small spoon, carefully spread the topping over each one.
- 9
Bake in the center of the preheated oven until the rolls are golden brown and the tops have cracked, about 20 minutes. Transfer to a wire rack and let cool to room temperature before serving.
