Classic Tomato Concassé

    Fill a large bowl with ice and water and set it aside.

    Bring a large pot of water to a boil.

    Use a knife to cut an X on the bottom of each tomato.

    Put the prepared tomatoes into the boiling water and cook until the skins start to loosen, 10 to 40 seconds.

    Move the tomatoes to the ice water and let them cool for 2 to 3 minutes; once cool enough to handle, peel the skin from each tomato.

    Slice each tomato in half crosswise, remove and discard the seeds, and finely dice the flesh.
