Silky Vanilla Cream Sauce

    Warm 2 cups milk in a heavy saucepan over low heat until it reaches a simmer, about 5 minutes.

    Whisk the remaining 1/2 cup milk with the cornstarch in a bowl until dissolved.

    Add the sugar and egg yolks and whisk until smooth.

    Slowly pour the milk mixture into the simmering milk while gently whisking the simmering milk; continue to simmer, stirring often, until thickened, about 3 minutes.

    Take the saucepan off the heat and stir the vanilla extract into the sauce.

    Strain the sauce through a wire mesh sieve into a bowl to catch any cornstarch lumps.

    Lay a piece of plastic wrap directly on the surface of the sauce to prevent a skin from forming; let it cool to room temperature, about 20 minutes.
