    Fill a large pot with lightly salted water and bring it to a rolling boil over high heat. When the water is boiling, stir in the pasta and return it to a boil. Cook uncovered, stirring occasionally, until the pasta is cooked through but still slightly firm, about 8 minutes. Drain well in a colander set in the sink.

    Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.

    In a bowl, mix the ham, sour cream, mushroom soup, 1/2 cup of mozzarella cheese, yellow mustard, and 1 tablespoon of parsley until well combined. Fold in the cooked pasta, season to taste with salt and pepper, and spoon the mixture into the prepared casserole dish. Sprinkle the top of the casserole with 1/2 cup mozzarella cheese and 1 tablespoon of parsley.

    Bake in the preheated oven until the casserole is hot and bubbling and the cheese topping has melted and started to brown, about 30 minutes. Let stand for 5 to 10 minutes before serving.
