    Combine flour, 2 tablespoons oil, salt, and baking soda in a bowl and mix for 1 to 2 minutes.

    Add 1 3/4 cup water and mix until smooth and lump free, with a good batter consistency, adding more water if needed.

    Heat 1 tablespoon oil on a griddle over medium heat.

    Pour some batter onto the griddle and spread it in a steady circular motion.

    Cook until the edges begin to brown, 2 to 3 minutes.

    Remove from the griddle and repeat with the remaining batter, adding more oil between each batch.
