Lebanese Za’atar Flatbread

    Dissolve the yeast in warm water in a large bowl. Add 3 cups flour and the salt, and mix. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition.

    Turn the dough out onto a lightly floured surface. Knead until smooth, about 10 minutes. Put the dough in a greased bowl and turn it to coat with oil. Cover and let rise in a warm spot until doubled, about 1 hour.

    Preheat the oven to 500 degrees F (260 degrees C).

    Divide the dough into 16 equal pieces and shape into rounds. Roll them into 1/4-inch-thick circles. Use your fingers to poke the rounds and make small indentations.

    Stir the za'atar and olive oil together in a small bowl. Spread over the circles. Arrange on ungreased baking sheets.

    Bake in the preheated oven until the dough is golden brown, 5 to 6 minutes.
